Orange You Glad I Made Salsa?

Orange and Black Bean Salsa

  • 1 can (15 oz.) of black beans, rinsed and drained
  • 2 oranges, peeled and diced
  • 1 jalapeno chili, seeded and finley chopped or ½ can of jaleapeno’s
  • ¼ c. fresh chopped cilantro
  • ¼ c. chopped scallions or onions
  • 3 tsp. olive oil
  • Juice of ½ a lemon
  • ¼ tsp. salt
  • ¼ tsp. ground cumin

Combine all ingredients. Chill. Service over rice or fish, or use as a dip with chips. Enjoy!
