Goat cheese portobello burger

Tonight we attempted to make a sweet potato au gratin, but while the recipe delivered on taste it was not ready for photo primetime.  So, while we continue to work on the presentation of this dish, I will share with you the main course, goat cheese portobello burgers.  Super simple, ready to eat in a matter of minutes.

Allow the goat cheese to soften at room temperature.  Cut 3oz of the cheese.  Add 1/2 a tablespoon of chopped chive into the cheese.

Meanwhile, remove the stem and ribs from the portobello mushrooms.  Coat the mushrooms with a little extra virgin olive oil and season with Montreal steak seasoning. Heat a cast iron skillet over medium heat, and place the mushrooms in cap side down. Cook for 4 minutes and flip.  Cook for another 4 minutes before flipping back onto the cap side.  Spoon the goat cheese onto the mushroom and cover the skillet with aluminum foil. Allow to cook for 2-3 additional minutes, until the cheese begins to get melty.  Serve on a burger roll.
