Another happy 30RF

In honor of another 30RF, I am posting a quick and easy appetizer: Cheddar stuffed jalapeño peppers.  We received a bunch of hot peppers from the Farmer Dave CSA, a collection of poblano and jalapeño peppers.  We stuffed the peppers with a mix of cheddar cheese, cream cheese and chipotle powder.  The chipotle powder is from Gryffon Ridge, a spice merchant from Maine we found at the Crystal Spring Farmers Market in Brunswick, Maine this past summer.  Their spices are all top quality, many are organic, and all are available online:  The chipotle powder adds a nice kick to the peppers, as if they needed a little more kick!  Super quick, super easy.


  • 8-12 jalapeño peppers, sliced in half and seeded
  • 2 ounces of shredded cheddar cheese
  • 2 ounces of cream cheese, room temperature
  • 1 teaspoon of chipotle powder

Slice the jalapeño peppers in half, and remove the seeds and ribs.  Combine the cheeses and the chipotle powder in a bowl.  Stuff the peppers with the cheese mixture.  Bake for 10 minutes at 400F or until cheese begins to melt.  Top with sea salt and serve hot.
