Another week of produce from Farmer Dave, another new vegetable. This week it was celeriac. Also called celery root, this is a winter root vegetable. Many sites I looked at said it can be used in soups, and I saw a recipe for a potato and celeriac mash that sounded good.
One of the health benefits of celeriac is that it lowers cholesterol. It also contains a lot of fiber (as if we need more fiber with our high vegetable and fruit diet).
