It is great to have a few weeknight meals that can be thrown together in no time, with very few ingredients. Our 10 minute fish tacos are just that sort of recipe.
Heat the black beans over medium heat until warmed through, about 5-6 minutes.
Combine the avocado, onion and tomatoes in a bowl. Season with salt and pepper for a quick fresh salsa.
Season the tilapia filets with a dusting of chipotle powder. Heat in a non-stick pan over medium heat, 2-3 minutes per side.
Heat the tortillas over a gas burner, or toss in the microwave for 30 seconds.
With all the ingredients put together in less than 10 minutes it is time to make some tacos!
