This recipe is a nice change from the usual veggie burger on a roll.
In a medium bowl, combine the yogurt, garlic powder, paprika and salt. Whisk together and season to taste.
In a large bowl, combine the arugula, red peppers, cucumber, olive oil and feta cheese. Toss the salad to coat with the oil. Season with salt to taste.
Slice the top off of the pita breads and stuff into the base of the pita to reinforce the pocket. Stuff the pita with salad, veggie burger and slices of hard-boiled egg. Top with the Greek yogurt dressing.
I served these pockets with homemade onion rings coated in panko.
