Sweet start to the week

This morning I decided to make some French toast for breakfast.  But not just any French toast, cinnamon raisin swirl French toast.  Of course I took the shortcut of buying the cinnamon raisin swirl bread the other day at the store.  But it was no less delicious.  A great way to start a busy week (just over 2 weeks until vacation!).


  • 6 pieces of cinnamon raisin swirl bread
  • 3 eggs
  • coconut milk (maybe about 1/4 cup)
  • cinnamon (1/2 tablespoon or so)
  • pinch of salt
  • maple syrup
  • confectionary sugar

In a large flat dish, crack the 3 eggs and beat with the coconut milk (of course you can use regular milk if you want).  Season with cinnamon and salt.  Place the slices of bread in the mixture and allow to soak for 5 minutes per side.

Heat a non-stick skillet over medium heat.  Add the bread and cook for 3-4 minutes per side, until lightly browned.

Serve the French toast sprinkled with confectionary sugar and plenty of maple syrup.

And now for a look at what else is on tap for this week.

Sunday: slow cooker Sunday returns with a vegetable biryani.  This is my first attempt at this, so we will see how it turns out.

Monday: veggie burger pockets.  These were a hit last time, so why not go back and try them again.

Tuesday: Homemade cabonara.  I already have the fresh pasta made and in the fridge, so this is a quick midweek dinner.

Wednesday: Meg will be at class, so we will see what Gramma and I decide to have this week.

Thursday: Portobello burgers with a red wine reduction BBQ sauce.  I was inspired by a Bobby Flay burger recipe with the red wine reduction to try it on portobello burgers.

Friday: I will be at the MIT Sloan Sports Analytics Conference this weekend, so not sure what will be on tap for our usual 30 Rock Friday dinner.

I have a bunch of other recipes, and some guest blogs to get up here as well.  Should be a busy week, and like I said, the official countdown to vacation is on!!
