Danny’s leftover challenge

Both Meghan and I absolutely hate throwing food away.  I have bags of frozen shrimp shells in the freezer in case I want to make some shrimp stock or broth.  I eat a lot of leftovers for lunch at work during the week.  I plan meals for the week with leftovers in mind.  So of course I was up for the challenge of preparing a leftover meal.

In this case, I had an open jar of piquillo peppers and about half a log of goat cheese.  What could be better than goat cheese stuffed grilled piquillo peppers?  They make a great appetizer or a side dish.

In a bowl, combine the goat cheese, some salt and pepper, and some oregano.  Fill the peppers with the goat cheese mixture.  In a sauté pan over medium heat, cook the peppers for a few minutes per side, to get a little char on them and melt the cheese, just a bit.  Top with extra virgin olive oil, salt and more oregano.
