PB&J waffles

After a busy weekend with my godsons, I am keeping tonights post short and sweet. For breakfast today I tried to make peanut butter and jelly waffles. Who wouldn’t want PB&J for breakfast? I simply heated the strawberry jelly we had left in the fridge over medium heat in a small pot, whisking periodically to keep it smooth. I then mixed in 2 tablespoons of peanut butter into my usual waffle mix (3 eggs, 1 1/2 cups of coconut milk, 3 tablespoons of melted butter, 3 cups of flour, 6 teaspoons of baking powder, salt, 3 tablespoons of sugar). Each waffle was made with 2/3 cups of the mix, and topped with the jelly syrup.

Of course the waffles were a hit, and gave us the energy needed to power through a trip to the lakeside playground in the rain, a water light show and some afternoon ice cream. I think we will all sleep well tonight.
