I wish I could say that my 10 day hiatus was because I was off on a beach, working on my sunburn and relaxing while enjoying some adult beverages. Instead, it has been because life got too busy and there has barely been time to get in the kitchen and cook anything other than a box of pasta or a frozen veggie burger. Thankfully, spring has sprung and farmer’s markets are coming. The influx of fresh produce will reinvigorate my creativity and inspire me to get back at it.
In the meantime, here is a warm potato salad that I whipped up this week. It mixes sweet and red potatoes, and the use of sour cream instead of the typical mayo and mustard, along with the scallions, gives it a mashed potato feel.
Bring a large pot of water to boil and salt liberally. Add the potatoes and cook until fork tender, about 10 minutes or so. Drain the potatoes and pour into a large bowl. Add the sour cream, scallions, parsley, salt and pepper. Using a large spoon to gently mix. Taste for seasoning. Serve the salad warm for that mashed potato flavor, but it is also great served cold.
