A change from the usual taco dinner

I mentioned the other day how pizza is a great canvas for dinner.  Well, we love pizza.  And we love tacos.  So why not make a taco pizza?  Have to give credit to Food Network Magazine here, but certainly something that is right up our alley.

Taco Pizza

  • Pizza dough (I made homemade dough, but certainly any store bought dough would work)
  • 1 can of vegetarian refried beans
  • salsa
  • 2 scallions, sliced
  • Mexican cheese blend, shredded
  • lettuce
  • 1/2 a tomato, diced
  • juice of 1 lime
  • salt
  • fresh cilantro, chopped

Preheat the oven to 450F.  Roll out the dough and place on a pizza stone.

Spread the refried beans over the dough. Top with salsa and scallions.  Top with the cheese.  Bake for 10-15 minutes.

While the pizza is baking, combine the lettuce, tomato, lime juice and salt in a bowl.

Remove the pizza from the stove.  Top with the lettuce mixture and the cilantro.
