After another successful trip to the Wakefield Farmers Market on Saturday, our kitchen was stocked with ingredients for this weeks menu. We also picked up some pea shoots, which I have never used before but am excited to try in a variety of recipes this week.
For this weeks menu choices I have included a breakfast and lunch option as well. Truth be told, all these recipes can be used for lunch or dinner. The jazzed up caprice salad was inspired from an episode of Sandwich King on Food Network. It is my twist on a sandwich that I love to get for lunch. The chilaquiles were this mornings breakfast, but could certainly be a brinner as well.
