As the weather starts to cool off, Meg and I break out the slow cooker and start making more soups and stews. Not only are they warm and delicious meals but they last all week for lunches and leftover dinners. This week we have 3 soups on the menu, so let me know which one you want to see posted this week.
Hot and sour soup: This will be served along with some portobello burgers, a hot and sour soup from our vegetarian cookbook.
Tuscan white bean soup: Served with some crusty bread, this is an Ina Garten recipe that I probably won’t modify too much.
Poblano Pumpkin stew: Already made this one this weekend, and let me tell you, while the combination may seem a bit odd, the pumpkin has a nice cooling effect on the poblano peppers. This is a rich and hearty stew, full of beans and great flavors. The original recipe was from Guy Fieri, and as Meg always says, he likes to use too many ingredients, so I played around with this recipe a little bit plus I made it vegetarian style.
