September 1 marked the unofficial start of fall and that means it is Soup Season. One of our standby soups is minestrone. We have made our “traditional” version several times, and posted it a while back. Here is the link to that post: http://wp.me/p1SOp5-fi
This time we decided to mix it up a bit and add in some mini spicy meatballs. The great thing about minestrone soup is you can add or remove whatever ingredients you want, you can use fresh or frozen or canned veggies. In place of pasta, we used rice. Nothing is better on a cool (or cold night, yes, they are coming) than a delicious warm bowl of soup. And the added bonus of this homemade soup is that your house will smell great!
